Although predicting the quality of a vintage during the harvest is always a risk, for 2016 we were ready to go out on a limb right from the first pressings. The season was very well balanced, with an ideal thermal variation between the days and the nights in both July and August, during the ripening stage.
The musts, even before the start of fermentation, were extremely aromatic and fragrant, indicating uncommon ripeness and aromatic complexity of the grapes.
Continuing the delicate work of minute adjustments that we have made over the years to our winemaking processes, in the 2016 vintage we increased the proportion of basic grapes fermented with native yeasts, which make up 20% of the blend for this Satèn.
We think this is probably the best way to typify our Franciacorta wines, enriching them with the multifaceted character and ripeness of the fruit while maintaining the clean elegance that has always distinguished them.
